We are thrilled to announce that The Royal Yacht Hotel will host an exclusive Liberation Gala Dinner featuring the renowned Michelin Star Chef Michael Caines MBE on Thursday, 15th May 2025. This special evening, commemorating the 80th anniversary of Jersey’s Liberation, is organised in partnership with Community Savings, a local charity dedicated to supporting individuals facing financial hardship.
Chef Michael Caines, celebrated for his modern European cuisine and commitment to locally sourced ingredients, will collaborate with our Executive Chef Inaka Weerasinghe and his team to present a luxurious five-course dinner. Guests will be treated to a Champagne reception, followed by a meticulously crafted menu that showcases the finest local produce. Chef Caines will personally introduce each course, offering insights into his culinary inspirations and techniques.

Canapés: Buckwheat pancake with smoked salmon mousse; Truffle and cheddar cheese gougères; Chicken liver parfait with orange jelly

First Course: Scallop ceviche with Oscietra caviar, avocado, honey, and soy with citrus vinaigrette

Second Course: Warm salad of lobster with mango and cardamom vinaigrette, curried mayonnaise

Third Course: Pan-roasted turbot with Jersey new potatoes, leek, and a seaweed and caviar butter sauce

Main Course: Fillet of beef with English asparagus, roasted shallot, celeriac and truffle purée, red wine sauce
