2. Get a Massage

8. Exercise

Regular moderate exercise can increase your body’s production of natural antioxidants, which help protect cells. Victor says:

“I like this dish because the customer can season the beef to their liking allowing them to personalise the dish to their desired flavour”

 

Main

‘Roast cod fillet, peas, capers, baby gem lettuce, pancetta’

Victor says:

“This is the perfect summer dish, a nice chunky piece of fish with a light but piquant aroma”

 

Dessert

‘Strawberry parfait, toasted marshmallow, white chocolate mousse’

Victor says:

“In season strawberries, this dish has a refreshing and light taste and is perfect if the sun is shining! I would also add a glass of Elysium Black Muscat”

 

Wines

Victor has suggested two wines for your meal…

If you are a lover of white wine, he recommends the ‘ Waterkloof – Circle of Life‘ – a full bodied blend of Sauvignon Blanc & Chenin Blanc. Waterkloof use Biodynamic farming and haven’t used pesticides since 2008, achieving ‘Biodiversity Champion Status’

If you prefer red wine, Victor recommends the light bodied Pinot Noir from Cloudy Bay (New Zealand). He says this wine would be paired perfectly with his chosen starter of beef tartare.

Kitchen Confidential is back!

Kitchen Confidential is back after a huge success last time! The event will give eight amateur chefs the opportunity to be taught how to create a selection of dishes from our award-winning Restaurant Sirocco’s menu.

This will be followed in the evening by a full restaurant service, run by the participants for their invited guests, whether that be friends, family, clients or colleagues.

This years Kitchen Confidential will be raising money for the fantastic charity that is Macmillan, who offer free practical information, and emotional and group support to people in Jersey with any type of cancer and at any stage, along with their families and friends.

Kitchen Confidential Success

On Thursday 24th August 2017 we hosted the event ‘Kitchen Confidential’ organised by Kate Lamy with an aim of raising money to build a school in Nepal after their devastating earthquake back in 2015.

 

8 amateur chefs took to Sirocco kitchen for the day, led by Head Chef Steve Walker & his team. They had to prepare all their dishes and ingredients from scratch and then go on to serve a full Restaurant Sirocco later that evening.

 

We have now received the news that the school is now finished, helped by the money raised from the successful ‘Kitchen Confidential’ event!
